Carbquick Bread

It takes just minutes to prepare a Carbquik bread dough to bake into a hearty loaf. It's perfect for anyone following a low-carb diet plan.

Ingredients

Yeast

  • 1 1/4 cups warm water
  • 1 1/2 teaspoons inulin
  • 1 tablespoon + 1/4 teaspoon rapid rise yeast 2 packets

Dry Ingredients

  • 2 cups Carbquik flour
  • 1 1/2 cups whey protein isolate Isopure
  • 3 tablespoons psyllium husks
  • 1 1/2 teaspoons guar gum
  • 1 tablespoon xanthan gum
  • 1 tablespoon baking powder

Wet Ingredients

  • 1/4 cup heavy whipping cream
  • 3 large whole eggs beaten
  • 1/4 cup extra virgin olive oil

Instructions

  • Stir yeast and inulin into warm water. Set aside.
  • Place dry ingredients into a large mixing bowl. Stir to combine.
  • Add yeast water, heavy cream, eggs, and olive oil to dry ingredients and mix thoroughly.
  • Cover the bowl with plastic wrap, then cover it with a dishcloth to keep out the light. Let dough rise in a warm, dark place (about 85°F) until doubled in size, about 1 hour.
  • Preheat the oven to 350°F.
  • Remove the cover from the bowl.
  • Transfer dough to a parchment lined bread pan. Gently shape it into a ball. Be careful not to press out the air.
  • Bake bread for 45 minutes until golden brown.
  • Lift the bread from the pan using the edges of the parchment paper. Transfer to a wire rack to cool. Cool completely before slicing.
  • Use a serrated knife to slice bread, for best results.

Notes

Tip: Place the plastic wrap covered pan in an oven with the light on. Putting it just under the light in the oven gives it a warm environment to rise.
Note: If you don’t like the texture of psyllium husks, then first pre-soak psyllium husks or psyllium powder in the yeast water in step 1. It will form a gel. Then process the bread dough in a food processor for steps 2&3.
