Start your day off with these simple pancakes made with just three ingredients. They are a quick and easy breakfast idea that is delicious and nutritious.
Place all ingredients in a small food processor or blender. Purée until ingredients are well combined.
Drop heaping tablespoonful of mixture onto lightly greased griddle or skillet. There should be enough pancake batter for 6 small pancakes.
Cook for about 1 to 2 minutes until the edges and bottom are set. Then flip and cook the other side until set, about 1 minute more.

Add some cinnamon or other spices to the batter for an extra flavor boost.If you want a heartier version, add some chopped nuts or chocolate chips to the batter.Add a little milk or cream to the batter to give it a richer flavor. Unsweetened almond milk can be added instead to keep them dairy free.
