Ingredients
4ripe pears
1cupof waterplus enough water to submerge the pears in the pot
½cupbrown sugar
1cinnamon stick
2lemonsplus 1 lemon
Instructions
Prepare a lemon water bath by squeezing the juice of 2 lemons into a bowl with 1 cup of water. Quarter, peel and core pears. Place sliced pears in the lemon water bath as you go to prevent browning.
To a pot, add ½ a cup of brown sugar with 1 cup of water, and a cinnamon stick. Stir mixture until sugar dissolves.
Gently add pears to the pot. Add the juice of 1 lemon. Strain any lemon seeds from the liquid. Cover with water. Bring ingredients to a boil over medium - high heat. Once the liquid boils, lower the heat to a simmer. Simmer for 5-10 minutes until the pears are just cooked.
Test the pears by piercing the flesh with the tip of a small knife. They are ready when the knife easily pierces the pears without resistance.
Use a slotted spoon to gently remove the pears from the liquid and transfer them to a bowl.
Strain the syrup and pour it over the pears.
Allow stewed pears to cool to room temperature. Cover and refrigerate until chilled. Best served chilled the next day.
