Carbquick Brownies

Chocolate lovers will enjoy low-carb Carbquik brownies. They are quick to make and taste delicious. You'll have warm, chocolatey brownies in minutes!

Ingredients

  • ½ cup butter 1 stick, melted
  • ½ cup sweetener I used Bocha sweet
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened cocoa powder
  • ½ cup Carbquik
  • ½ cup sugar-free chocolate chips

Instructions

  • In a large bowl, use a whisk to beat melted butter with egg and vanilla.
  • Fold in sweetener, Carbquik, and cocoa, beat until smooth.
  • Fold in chocolate chips.
  • Pour into an 8x8 baking pan lined with parchment paper. Smooth down with a spatula.
  • Bake for 20 minutes at 350°F until a toothpick inserted into the center comes out clean. If you like undercooked brownies, start checking after 10 minutes for desired doneness.
  • Cool in the pan on a wire rack.
  • Lift brownies out of the pan with the parchment paper and cut into pieces.

Notes

Although lining with parchment paper is preferred, the brownies should release if the bottom of the baking pan is greased.
Those who prefer moist brownies may want to take the brownies out of the oven slightly undercooked.
Allow the brownies to cool. You will be able to cut the brownies better after they have cooled. Otherwise, they can be too crumbly and fall apart if cut warm.
