Gluten Free Green Bean Casserole (Low Carb)

Avoiding wheat doesn't mean you have to miss out on classic dishes. This homemade green bean casserole is wheat free and perfect for holidays and every day.

Ingredients

Fried Onions

  • 2 tablespoons Coconut oil
  • 3 large eggs whisked
  • 1/2 medium yellow onion ½” slices
  • 1/2 cup almond flour
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon paprika
  • pinch black pepper

Casserole

Instructions

  • Preheat oven to 350.
  • In a large skillet, heat up coconut oil.
  • In a shallow dish, place eggs.
  • In a second shallow dish, place almond flour, garlic powder, salt, paprika and pepper. Whisk together.
  • Dip onions into eggs, toss in flour mixture and place into skillet.
  • Fry onions for 2-3 minutes per side, flipping to other side until browned.
  • Remove from skillet and allow to dry on paper towel, sprinkle with salt.
  • Once all onions have been made, deglaze pan with chicken stock.
  • Toss green beans in skillet to coat and stir in bacon.
  • In 9x13 casserole dish, place green beans and toss green beans in cream of mushroom soup.
  • Place fried onions on top of even layer and bake for 20-25 minutes.

Notes

We used this low carb cream of mushroom soup, but you can also use a paleo dairy-free cream of mushroom soup if desired.
