Ingredients

  • 2 cups fresh raspberries or frozen raspberries
  • 2 tablespoons water
  • ¼ cup white sugar or sugar alternative
  • 1 tablespoon lemon juice

Instructions

  • Combine raspberries, water, sugar and lemon juice in a saucepan.
  • Place over medium low heat and bring to a simmer, stirring regularly.
  • Simmer for 8-10 minutes until the raspberries thicken

Notes

Use a keto sugar substitute for a low-carb raspberry compote. You can also replace the sugar with maple syrup or brown sugar for a richer flavor.
For a smoother sauce, you can pour the fruit compote through a mesh strainer to get a seedless sauce.
If you plan to use it as a spread, you may want to add some cornstarch or tapioca starch so it will be thicker. You can even use one of the keto cornstarch substitutes for a low-carb spread.
