The best thing about this Carbquik recipe is that you only need a few simple ingredients. In fact, you probably already have everything you need if you already have a box of Carbquik baking mix.

Here’s what’s you’ll need for the recipe:

  • Sweetener – Use a keto friendly sugar alternative like BochaSweet or Lakanto Classic.
  • Eggs act as an emulsifier that makes the batter creamy.
  • Vanilla extract adds sweetness and flavor.
  • Cocoa powder gives the brownies a chocolate flavor.
  • Carbquik is used as a low carb replacement for regular flour.
  • Sugar-free chocolate chips make the brownies extra chocolately.

Instructions

In a large bowl, combine vanilla extract whit melted butter and egg.

Stir in sweetener, Carbquik, and cocoa. Stir till smooth.

Fold chocolate baking chips into the chocolate mixture.

Pour into an 8×8 square pan lined with parchment paper. Smooth down with a spatula.

Bake for 20 minutes at 350°F until a toothpick inserted into the center comes out clean. If you like undercooked brownies, start checking after 10 minutes for desired doneness.

When done, remove from oven and cool in pan on a wire rack. Then cut into squares when cooled completely.

Tips

  • Add frosting. You can use your favorite low-carb chocolate frosting recipe to add a delicious chocolate topping.
  • Reduce eggs to one. You’ll get a denser brownie with a more fudge-like texture if you cut the amount of eggs in half.

Notes

Although lining with parchment paper is preferred, the brownies should release if the bottom of the baking pan is greased.
